North Carolina potatoes are known as “Summers Best Potatoes, Every Day, In Every Way.” Harvested from mid-June through July North Carolina growers produce round whites, reds, and yellow flesh potatoes for table stock and chip stock varieties for potato chip facilities. Varieties produced are very versatile and can be baked, boiled, roasted, and fried. Approximately 17,000 acres are produced annually with approximately 75% of this produced for potato chips. The North Central Potato Breeding Team is a cooperative effort of the potato research programs at Michigan State University, the University of Minnesota, North Dakota State University, and the University of Wisconsin. Teams of researchers from the four cooperating institutions apply conventional and molecular breeding strategies to develop and test improved cultivars for specific markets.
